Treurer Oli Novell 2024
Novell oil is the oil corresponding to olives harvested first, at the beginning of October. These olives are harvested at their optimum point, just before they are ripe, and their color is more powerful, their flavor more intense and their texture more unctuous. Much more aromatic, it is rich in polyphenols (natural antioxidants that protect against aging and the appearance of cancerous cells). While in its production it has a lower yield, approximately 50% compared to the usual harvest, its yield in the kitchen is higher, since its aromas and flavors are concentrated.
