Gourmet recipe of kumquat savarin with fruit salad, chocolate and oil mousse

Hello everyone! Today in Treurer we are going to prepare a delicious dessert, a savarin with oil foam and fruit salad.

A savarin is a dessert of French origin that consists of a fluffy and round sponge cake, made with flour, eggs, yeast and butter, bathed in a liquor syrup and decorated with whipped cream and fresh fruits. The savarin dough is prepared with a technique called natural fermentation, which consists of letting the dough rest for a while so that the yeast can do its work and the dough can rise before being baked. Savarin is served as a dessert on many special occasions and is considered a classic French pastry.

Ingredients

  • 200 ml of extra virgin olive oil
  • 16 grams of glycerin (derived from glycerin)
  • 2 eggs
  • 100 grams of sugar
  • Kumquat peel
  • 50 ml orange juice
  • 150 ml olive oil
  • Food grease to grease the mould

Tools

Savarin mold: a ring-shaped mold with a hole in the center, used to bake the savarin cake.

Electric mixer: used to beat the eggs and sugar, as well as to mix the flour and melted butter into the cake batter.

Chef’s knife: used to cut fruits for fruit salad.

Fruit peeler: used to peel the fruits for the salad.

Citrus juicer: used to extract the lemon juice for the fruit salad.

Preparation

Let’s start with the oil foam. We will need 200 ml of extra virgin olive oil and 16 grams of glice. Heat the oil to 65 degrees to dissolve the glice, put it in a half-liter siphon and shake it. Afterwards, we put it in the refrigerator so that it gets warm and takes body.

Now it is time to prepare the cake. In the Thermomix we mix two eggs and 100 grams of sugar for 2-3 minutes so that the egg doubles its volume. Then, grate some kumquat peel and cut it into small pieces to give citrus flavor to the cake. Add 50 ml of orange juice, 150 ml of olive oil and continue emulsifying in the Thermomix.

Grease the mold with a food grease to prevent the cake from sticking. Fill the mold with the cake mixture and bake for 20-25 minutes at 180 degrees. Once ready, let it cool and unmold it.

For the fruit salad, we can use any fruit we like, but today we are going to prepare it with kumquat. Peel the kumquat, cut it into small pieces and mix it with other fruits such as strawberries and kiwi.

Plating

To serve the dessert, fill the center of the savarin with the fruit salad, place fruit around it, dip it in chocolate and crown it with the oil foam that we have prepared previously.

Add some mint and it’s ready to enjoy!
